BBQ Tofu Quesadilla with Medium Cigar City Salsa Smoked Salsa

  • 1 block of firm tofu, sliced into strips
  • vegetable oil
  • 2 egg whites
  • BBQ sauce
  • 1 cup flour
  • salt and pepper
  • 1 onion, diced
  • colby jack cheese
  • tortillas
  • Cigar City Salsa Smoked Salsa (flavor of choice)

1. Freeze the tofu.

2. Heat oil in a cast iron skillet.

3. Remove the tofu from a freezer and allow to thaw. Mix the egg whites and 2 tablespoons of barbeque sauce in a metal bowl. In another metal bowl mix the flour, salt and pepper.

4. Dip the thawed tofu into the egg mixture and then dredge in flour. Shake off any loose flour. Gently place as much of the tofu as you can fit in the cast iron skillet (leaving some space between the pieces) and fry for one minute on each side. Remove from the oil and place on a paper towel lined plate. Pat to remove excess oil. Repeat until all tofu has been fried.

5. Lay the tofu on a wire rack above a baking sheet. Brush one side of the tofu with barbecue sauce. Flip and brush the other side.

6. Turn on the broiler. Allow the tofu pieces to marinate while the broiler heats up. When it is ready, place the cookie sheet and wire rack in the oven so that the top of the tofu is close to the heat source. Broil for about five minutes. Remove the tofu from the oven and flip each piece. Return to the oven and broil for another five minutes. Remove from the oven and place in a metal bowl. Lower the oven temperature to 450 degrees Fahrenheit.

7. Add a cup of barbecue sauce to the tofu and stir until each piece has been generously covered.

8. Layer half of a tortilla with cheese, diced onion and barbecue tofu. Fold the other half over. Place on a lightly sprayed baking sheet. Cook for 7 minutes.

9. Top quesadillas with smoked salsa. Cut with your teeth.
